Shrimp With Pasta and Bacon Recipe

  • 12 large shrimp, de-veined and shelled, with the tail on
  • 6 strips of good quality, thick sliced bacon
  • 2 to 3 TBS olive oil
  • 1 medium onion, cut into chunks
  • 4 to 5 fresh garlic cloves, peeled and chopped
  • 1/4 to 1/2 tsp finely chopped fresh hot pepper, optional, this adds flavor, not heat
  • sea salt
  • freshly ground black pepper
  • 3 nests of angel hair pasta that cooks in 2 minutes
  • 1/4 cup roughly chopped, lightly salted macadamia nuts, optional

It's important not to overcook the shrimp. When it is pink all over, and no longer clear, it is done. By putting the shrimp in the pan, then the pasta into the boiling water, they will be done at the same time. A different kind of pasta can be used, putting the shrimp in the pan to cook 3 minutes before the pasta is done.

  1. Put bacon in a skillet and water on to boil for the pasta.
  2. When the bacon is done, remove it from the skillet, crumble and set aside.
  3. Pour off the bacon fat leaving the bacon residue, add the olive oil, onion, garlic, and hot pepper to the skillet. Saute over medium to low temperature until the onions are softened and clear. Remove from the skillet to a plate.
  4. Put the shrimp in the skillet, raising the heat to medium. Put the pasta into the boiling water. Turn the shrimp to cook evenly on both sides, and add the onion mixture back to the shrimp, along with the crumbled bacon. Season to taste with salt and pepper.
  5. Drain the pasta, place half on each plate, top it with the shrimp, and, if you have them, sprinkle macadamia nuts over all for a delicious crunch.

Shrimp with pasta, bacon, onions, and garlic combines five of the world's greatest flavors into one easy dish. Angel hair pasta is the perfect choice for this dish because it cooks quickly and adds great pasta flavor without being heavy. Fettucine also works well with different timing. With shrimp, timing is important. Letting shrimp sit in the pan after it is cooked leads to overcooking which makes shrimp tough. Good shrimp deserve a special place on any menu.
